La Belle Farms Duck!


I recently got these La Belle Farm Ducks.  They're air dried birds have enormous breast's (insert pun here) and the perfect sized legs and wings for us!  This is the dish we're using for a duck breast entree.  The duck is spiced with cumin, coriander, clove, and cardamom.  It is garnished with a watercress puree, pickled grapes, hazelnuts, fried pieces of Oatmeal-hazelnut polenta, and whipped yogurt.  Now to figure out a leg and wing dish...  all waiting in brine till we can decide.  Any ideas, let me know!

  3. take the bones out of the legs, leave some of the muscles whole-ish, pack into meef middles with herbs, maybe some mushrooms, spices, nuts, whatever, poach/confit with Optimus Prime, cut into discs, bread with ground fresh duckfat and bread crumbs, fry.

  4. bring the wings to Bon Chon and tell them to fry them up! Bon Chon in Singapore is pretty legit!

  5. made a sweetened spiced duck stock, 1 % agar for the stock then melted in added 25% labneh (of the stock weight) blended put in to isi.

    kitsch, like the idea definitely going to take it in that direction. except optimus needs a little work... again.

    thangle13, if there is better tasting bon chon in singapore i don't want to know. their crispy skin in annandale already melted my brain. Me and B are gonna see you in march or sooner?!?!
